Rice is the main ingredient in many of the local dishes, such as <\/span><strong><i>arr\u00f2s al forn<\/i><\/strong><span style=\"font-weight: 400;\"> (oven-baked rice), <\/span><strong><i>arr\u00f2s cald\u00f3s<\/i><\/strong><span style=\"font-weight: 400;\"> (rice stew), <\/span><strong><i>arr\u00f2s en fesols i naps<\/i><\/strong><span style=\"font-weight: 400;\"> (rice with beans and turnips),<\/span><strong><i> arr\u00f2s blanquet<\/i><\/strong><span style=\"font-weight: 400;\"> (rice with onion sausage) and, of course,<\/span> <strong>paella<\/strong><span style=\"font-weight: 400;\"> which in X\u00e1tiva is cooked with lots of meat and vegetables. Also known as spring garlic, young garlic or baby garlic, it is garlic that is harvested before it has fully ripened, giving a milder and more delicate flavour to the dishes in which it is used.
